Saturday Shoes

Taken when we went to the Duke of York pub after we completed our ESL classes.

Recipes - Roasted Tomato Soup with Grilled Cheese Croutons




I had some tomatoes from the garden that needed to be used up. I have tried tomato soup before from fresh tomatoes but it was usally thin and not very flavoutful.
I came upon this Roasted Tomato Soup and immediately had to try it. It was delicious and very easy.
I didn't make the grilled cheese croutons, but they certainly look delicious. This would be a great recipe for a winter brunch.
I didn't get a photo, what was I thinking???

Sunday Baking

Finally! A whole day to myself to play!

Had too many bananas in the freezer so went looking for a really easy banana bread and this couldn't have been easier. I doubled it and it worked out perfectly. You don't even have to use a mixer on it.
I forgot to get a picture until I had cut it and frozen most of it. This half is for the next day or so.

But my main GOAL today was pumpkin cheesecake bars.  These were super easy to make, the only thing I didn't do quite right was to keep only 1/3 of the plain cream cheese batter, resulting in less than a colourful top. I had too much white to mix through the pumpkin layer.

Toronto Thursday - ESL Class

I've been MIA around Blogland for the last 3 weeks as I was taking a Teaching English as a Second Language class on the weekends, 3 of them from 9-6 Saturday and Sunday. so with working full time there's just been no time to blog or read blogs *sigh*!!

Theere are some sites that consideer this course as a scam, whatever, I got what I wanted out of it and I think most of the class did also.
But I really enjoyed the class, particularly the group of 19 others in my class. The energy and enthusiasm was amazing. We went all very nervous for our final presentations but every single person did an astonding job.
Every one remained engaged and participated in all the lessons. We covered every possible subject from making paper puppets to project management to making kites to learning about mummies.

Sunday Skies - Ireland


Sunset over Galway Bay in Ireland when we were spending a week in the area.

And see the sun go down on Galway Bay.

Just to hear again the ripple of the trout stream

And the women in the meadows making hay,

To sit beside the turf fire in the cabin

And watch the barefoot gossoons at their play.

And the women in the upland diggin' praties

Speak a language that the strangers do not know.



For the strangers came and tried to teach us their way.
